White Bay Beer Co now brewing in Balmain

One of 2020’s most hotly anticipated brewing start-ups, White Bay Beer Co, has debuted its first beers in cans.

White Bay Beer Co has been founded by something of a beer industry supergroup: Sales veteran Tim Fishwick (formerly of Balter and Little Creatures), keg baron Adam Trippe-Smith (now of Konvoy Kegs, founder Kegstar and McLaren Vale Beer Co) and publican Tim Condon of Cricketers Arms Hotel and East Village Hotel in Balmain.

Their brewery in Rozelle on Sydney’s Balmain Peninsula had just been commissioned when the COVID-19 shutdown occurred, forcing them to divert all production into cans.

Brewers Dennis De Boer (ex-Modus Operandi Brewing Company) and Jess Walker have given a taste of things to come with two core range beers, Union Lager and Sunny Pale, and the first in a limited edition IPA series, Embrace The Space IPA.

Fishwick told Drinks Adventures the company had been overwhelmed by the response from Balmain locals, who are once again able to purchase beers direct from the brewery from 3-5pm on Friday May 1.

“It’s nervous, we are now trying to work out how much beer we need to brew to get through the next three months,” Fishwick said.

“But for the situation we are in; opening up during a pandemic and only being able to sell packaged beer, we couldn’t have asked for a better start.”

Fishwick believes there is strong appetite among locals for the Union Lager, “a classic Euro-styled lager” that gives a nod to the Balmain area’s working class roots.

“We want to take on every international-owned lager that is on tap in this suburb,” he said.

The pale meanwhile is a generously hopped, slightly hazy brew that is closest in style to an American Blonde Ale.

Thanks to the response from locals, supplies of the White Bay beers are extremely limited at the moment.

Other than buying direct from the brewery, you can find them in select bottleshops in the Balmain area.
