The long anticipated Stone & Wood Brisbane brewery and taproom officially opened in Fortitude Valley on Friday November 1, 2019.
As reported on the Drinks Adventures podcast, Stone & Wood Brewing Company is Australia’s largest IBA-defined indie brewer, producing in excess of 12 million litres of during 2018.
Fifty per cent of this beer is sold within a three-hour drive of its home base in Byron Bay, making Brisbane a key market and the logical choice to have a physical presence.

Stone & Wood Brisbane is set inside the beautifully preserved heritage-listed building on Bridge Street, Fortitude Valley.
“In the new space, you’ll find a classic Stone & Wood interior, beautiful custom built furniture by local craftsman Blackwood Collective, merch outlet and a working brewery, plus a space for community events and training workshops for our trade partners,” Stone & Wood says.
“With the 8-hectolitre brewhouse and five fermenters, our brewer will produce one-off small batch beers exclusively for the venue, while our team will pour these straight from the tanks behind the bar.
“Meanwhile, our canteen will host a rotating selection of Brisbane’s favourite food vendors, whose tasty treats will match our diverse beer range – with Mr Bunz leading the charge.”
Stone & Wood Brisbane will be open until 10pm five days a week, but the company stresses that it will be providing a very different experience to that of Fortitude Valley pubs.
“You won’t find cocktails or spirits, TVs, pokies or TAB here – this is a brewery for beer-lovers,” says Stone & Wood.
Stone & Wood is one of many small independent breweries that has recently opened a second taproom as it progresses towards its goal of becoming a leading brewer on the eastern seaboard.
“In 20 years’ time, it could be the Coopers of the East Coast,” co-founder Jamie Cook told Drinks Adventures.
“That’s probably our ambition, to be a regional brewer, and if it takes us five years, ten years, 20 years to achieve that, then so be it.”
