Narita Airport (and Tokyo for that matter) has been rinsed of Japanese whisky and @chivasregal is making hay with these ‘Japanese oak finish’ expressions. Can’t believe how dire the whisky shortage has become in the nine months since I last visited.
It might get you kicked out of the @masterchefau kitchen, but rare and sashimi chicken is ubiquitous in Tokyo and various locals tell me it’s as safe as houses. I stepped into the breach with @inciderjapan as my guide: it was quite enjoyable and 24 hours later, no regrets. @mr.conolly I hear you didn’t have the cojones to get involved 🤣

We’re here for the sake but had a fascinating visit to a soy sauce brewery today. Old style techniques with the original 1875 wooden vats contributing lots of house character. No temperature control, seasonal fluctuations drive the fermentation. 😲

Great Chinese meal last night in Izumo served with warm sake. Sweet & sour pork.
It’s a cold one today.
Local sake brewers, one winemaker and also (apparently) brewing giants Asahi, Kirin and Suntory leave gifts for the Shinto gods at Izumo-taisha Shrine.
Fantastic visit to Asahi Shuzo brewery in Izumo, Shimane Prefecture. This is Eriko Terada, the daughter of the brewery president, who studied in Kyoto then returned to Izumo with her husband Koichi in 2001 to work for the family business. Her husband is now toji (head brewer) and she assistant-toji. Eriko is one of relatively few women brewing sake in Japan. #sakepresstour
